Which Old Testament Laws are we still supposed to follow today -- and why?

Any time one begins to read the Old Testament, especially Leviticus, we read about how the early Hebrews documented seemingly hundreds of dos and donts for just about any type of sin one might conjure up. Most of these dos and donts pretty much were just basic common sense - others were just plain hard to follow. The fact is that the early Hebrews were so fearful of making a mistake in their walk with God that they wrote rules for just about every situation they could think of. Even in the early Hebrew writings the scribes were so fearful of taking the name of God in vain that they substituted the Y sound with a J sound and the name Jehova was written in the place of the true name of God, Ya-Weh just in case they might slip up. Because of that, when the interpretters of Scripture translated Hebrew into English the slang name for God, Jehova, came through instead of Gods real name, Ya-Weh!
If we really think back to when God gave His original COMMANDMENTS to Moses, there were only TEN basic sets of dos and donts, yet out of that some 600 additional dos and donts were written to clarify what God actually meant! Kind of like when after a Presidential speech on TV and the news media have a panel of experts to tell us ignorant common folks just what the President actually said or what he really meant between the lines!
